Ways to Incorporate More Coconut Into Your Diet:
- Just buy a coconut! Insert a wine corkscrew into two of the three holes to drain out the coconut water (and drink it: very high in electrolytes!) Then whack the coconut all around the periphery until it begins to split apart. Using a blunt instrument, dig the flesh out from the bark. Enjoy!
- Use coconut milk in lieu of regular milk. Just make sure you choose sugar free varieties. Great in smoothies, on granola, etc.
- Sprinkle shredded coconut on oatmeal, fruit, etc.
